How to Make Belgian Waffles with Warm Berry Compote
Step 1: Begin making your berry compote by melting butter in a medium saucepan over medium heat. Add honey, lemon juice, cinnamon and berries; bring to a boil. Reduce heat, simmer 10-15 minutes. Keep warm.
Step 2: Preheat waffle iron per the manufacturer's instructions. Grease with butter if necessary.
Step 3: Mix together dry ingredients in a medium bowl and set aside.
Step 4: In a large bowl, beat two eggs. Add milk, butter and vanilla and mix well.
Step 5: Stir the dry ingredients into the wet ingredients.
Step 6: Pour the waffle batter into the waffle iron and cook according to the manufacturer's instructions.
Let leftover waffles cool completely and then store in an airtight container in the refrigerator for up to 4 days. Berry compote can be stored in an airtight container in the refrigerator for 3-4 days as well. To freeze waffles, cool completely and then freeze in a freezer-safe container for up to 3 months. Reheat waffles in the toaster.
