Every cook needs a go-to recipe for strip steak and this recipe will not disappoint. Ready in 30 minutes, this steak recipe is tender, juicy and full of flavor. It will satisfy the pickiest child and husband and provides great versatility for side dishes that pair well.

What cut of beef is best?

Top sirloin strip steaks are my favorite cut to buy, I find them to be so tender and juicy. Ribeye is another great cut as well.

What should I serve with strip steaks?

So many side dishes pair well with this recipe but some of my favorites are mashed potatoes, loaded baked potatoes, roasted root vegetables, roasted cruciferous vegetables, and my homemade white cheddar macaroni and cheese.

Do I have to use cast iron?

No! A well-seasoned cast iron skillet is a staple piece of kitchen equipment that helps you achieve the perfect sear on the outside. Cast iron is also one of the best non-toxic pans to cook with, along with stainless steel. An added benefit of cast iron is its ability to increase the iron content of food cooked in it, making it especially great for individuals that struggle with anemia, a common issue for women today. If you do not have a cast-iron skillet, stainless steel is the next best option but this steak recipe can definitely still be prepared in a nonstick pan if that is all that’s available.

How do I preheat a cast iron skillet?

To prepare this strip steak recipe, you will want a nice and hot pan to achieve the perfect sear. Set your cast iron skillet over medium-high heat for 3-5 minutes, then add a small amount of avocado oil or other neutral cooking oil.

How do I test desired doneness of steak?

The finger test is the best way to check the doneness of your steak. This can be performed using the following insructions.

  1. Open the palm of your hand. Relax the hand. Take the index finger of your other hand and push on the fleshy area between the thumb and the base of the palm. Make sure your hand is relaxed. This is what raw meat feels like
  2. Now gently press the tip of your pinky and your thumb together. Again feel the fleshy area below the thumb. It should feel quite firm. This is what well done meat feels like when you press on it.
  3. Press the tip of your ring finger and your thumb together. The flesh beneath the thumb should give a little more. This is what meat cooked to a medium doneness feels like.
  4. Gently press the tip of your middle finger to the tip of your thumb. This is medium-rare.
  5. Press the tip of your index finger to the tip of your thumb. The fleshy area below the thumb should give quite a bit. This is what meat cooked to rare feels like. Open up your palm again and compare raw to rare.

How to Make Cast Iron Skillet Strip Steak

Step 1: Set your steak out on the counter approximately 15-20 minutes before you are ready to cook it.

Step 2: Generously season both sides of your strip steak with salt and pepper.

Step 3: Over medium-high heat, preheat your cast iron skillet for 3-5 minutes. Add 1 tablespoon of avocado oil or other neutral cooking oil with a high smoke point such as vegetable oil.

Step 4: Place your strip steaks in the skillet. You will hear a nice sizzling sound. Sear the first side for about 2 minutes, then flip the steaks.

Step 5: Cook for 1 minute, then reduce heat to medium and add 3 tablespoons of butter, smashed garlic cloves and fresh herbs.

Step 6: Cook to desired doneness. While it cooks, regularly spoon melted garlic herb butter over the tops of the steaks. Your cook time will depend on the thickness of your steak. For medium-well, I find this to be about 10 minutes but keep an eye on it and use the finger test to check doneness.

Step 7: When steaks are cooked to your desired doneness, remove from skillet to a plate and tent with foil. Let sit 10 minutes and then serve.
