Sausage and Tomato Cream Sauce over Pasta

            This dish is a quick and easy dinner to whip up on a week night for your family and is delicious served with fresh bread or rolls. Heavy cream and crushed tomatoes make up the base of this creamy and delicious sauce while Italian sausage, garlic and onions give it its flavor. Ready in less than 30 minutes, this is the perfect meal to add into your dinner meal rotation.

Ingredients:

Italian sausage- My favorite way to make this dish is to use a blend of spicy and regular Italian sausage but this is easier to do when doubling the recipe, since the sausage comes in 1-pound rolls. If using regular Italian, you can always add a few red pepper flakes if you prefer some spice.

Crushed tomatoes- I have made this recipe with tomato sauce and puree but prefer the thicker texture of the crushed tomatoes. Make sure to drain the tomatoes or the sauce will turn out a bit watery.

Salt- Be sure to taste your sauce when adding the salt. The sausage adds a salty bite that makes it unnecessary to add much extra salt so I only add ¼ teaspoon but taste and add more if you prefer it a bit saltier.

Heavy whipping cream- Don’t try to cut calories here, the heavy whipping cream makes the creamiest and tastiest sauce. If you want to use ½ and ½ you can but I highly recommend using full fat whipping cream for the best results.

How to Make Sausage and Tomato Cream Sauce over Pasta:

Step 1: Heat the oil in a heavy skillet over medium heat. Add sausage and cook until sausage is no longer pink, about 7 minutes.

Step 2: Add onion and garlic and cook about 7 minutes longer, until onion is softened.

Step 3: Add crushed tomatoes, heavy cream and salt. Simmer for 10 minutes.

Step 4: Cook pasta and serve sauce over pasta with fresh parmesan grated on top.

Storage:

This sauce keeps well in the refrigerator for up to 5 days. I actually find that the leftovers are even tastier than the fresh sauce. While both are delicious, the flavor has had more time to set in and the sauce thickens slightly when eating it the next day. This sauce can also be stored in the freezer for up to 3 months.
