Sundried tomatoes- I prefer to get the sundried tomatoes packed in olive oil. Drain before using.
Half and half and heavy cream- For a lighter option, you can use all half and half or replace a portion of the sauce with whole milk but I highly recommend the full fat version. The heavy cream creates the perfect creamy sauce.

Step 1: In a large skillet over medium high heat, melt butter. Add chicken, salt, pepper, and Italian seasoning. Cook chicken completely.
Step 2: Add minced garlic and cook until fragrant, about 1 minute.
Step 3: Add sundried tomatoes and spinach and cook until spinach is wilted.
Step 4: Add half and half and cream, bring to a simmer. Reduce heat to low and simmer for 15-20 minutes.

Step 5: While the sauce is simmering, prepare the pasta, cooking to al dente.
