This easy peanut chicken recipe is full of flavor and only takes a few ingredients, making it the perfect weeknight dinner that your family is sure to love. Serve over rice and pair with your favorite sides for a tasty and simple meal.

Ingredients in Easy Peanut Chicken

  • Shredded chicken breasts
  • Natural creamy peanut butter
  • Tomato sauce
  • Chili powder
  • Salt and pepper
  • Water

How to Make Easy Peanut Chicken

Step 1: Preheat oven to 450 degrees.

Step 2: Place chicken breasts in a baking dish and top with extra virgin olive oil, salt and pepper. Bake for 25 minutes, or until chicken is cooked all the way through.

Step 3: After chicken has cooled enough to handle, shred chicken breasts and place in a large pot. Alternatively, you can skip steps 1-3 and use a rotisserie chicken from the store.

Step 4: To the shredded chicken breasts, add the remaining ingredients and mix well.

Step 5: Cook over low heat for 75-90 minutes.

Step 6: Serve peanut chicken over rice.
