These easy, delicious pancakes are light, eggy and high in protein. Eggs and cottage cheese are blended together to make this batter nutrient-dense and delicious. Enjoy these for a healthy snack or a high-protein breakfast to start the day right.

Ingredients

  • Cottage cheese- I prefer whole milk but go for low-fat if you’re counting calories.
  • Eggs- Preferably organic pasture raised.
  • All-purpose flour
  • Whole milk
  • Butter- I use salted butter in almost everything but unsalted works as well.
  • Vanilla extract

How to Make Golden Delight Pancakes

Step 1: In a blender, blend together all ingredients until smooth, about 1 minute. 

Step 2: Heat griddle or frying pan over medium heat. Melt 1 tablespoon of butter to coat.

Step 3: Drop 1/3 cup of batter onto your pan for each pancake. This is a thin and eggy batter and these pancakes cook quick. Once they start to bubble up, flip and cook an additional 1-2 minutes. 

Step 4: Serve pancakes immediately with butter and maple syrup or any other topping that you enjoy. 

Storage

Store pancakes in an airtight container in the refrigerator for 3-4 days.

Notes

*This is a very thin batter. These pancakes have a consistency similar to crepes.

**Ditch the syrup and top with your favorite fruit for a light and healthy breakfast.
